Slow Cooker Egg Bake

Breakfast tends to be the hardest meal for some people to plan for — especially when it comes to making a meal for a big group of people. I love using the slow cooker egg bake when on vacation because it allows me to make a healthy meal that’s incredibly easy to prepare and clean up.

What’s great about this is you can customize the egg bake with whatever you want. And despite what you might think, egg bakes reheat well in the microwave — I love making a slow cooker egg bake on a Sunday evening as a part of my meal prep for the week. It reheats like a casserole. It helps to place it on a piece of paper towel while microwaving to help absorb the extra moisture.

Base Ideas:

Red Potatoes, Sweet Potatoes, Hashbrowns

Toppings:

Breakfast Meats (Bacon, sausage, ham), Veggies (Peppers, Onions, Broccoli, Mushrooms, etc),

Shredded Cheese, Fresh Herbs

Ingredients for Egg Bake Made On KARE11

  • 5 to 6 red potatoes, diced

  • 1lb. bacon, cooked and diced

  • 2 cups shredded cheese

  • Mushrooms, chopped

  • Peppers, chopped

  • Red onion, diced

  • 3 scallions, sliced

  • 18 eggs

  • 1 cup milk

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • Salt & pepper to taste

  • 3 scallions, sliced

Instructions:

If using bacon or sausage, cook and crumble ahead of time.

Grease slow cooker and line with parchment paper.

Lay out red potatoes on bottom. Season with salt and pepper.

Place half of the meat, veggies, scallions and cheese on top of red potatoes.

Continue layering, ending with cheese.

In medium bowl, whisk together eggs, milk, garlic and onion powder. Add salt and pepper.

Pour egg mixture over the top of the slow cooker.

Place paper towels between lid and slow cooker.

Cook on low for 7 to 8 hours or on high for 2.5 hours.

Serving Tips:

Have salsa, guacamole, hot sauce on hand for personalization.

Using the paper towel helps soak up the extra moisture created by the slow cooker.

Lining slow cooker with parchment paper allows for easy clean-up.
