On Your TV -- Twin Cities Live, July 3rd

Summer screams vacation, busy schedules and nights spent throwing together a last-minute meal after a baseball game. It does not scream Crockpot season.

Unless you live with me.

I love using my Crockpot — referred to from here on out as a slow cooker (Crockpot is a brand, slow cooker is the device). So when Twin Cities Live reached out about potential segment ideas, I went in heavy with my Summer Slow Cooker idea. And guess what? They loved it so much, they pushed me back to July so they could do an entire week of recipe ideas! How about that for some pitching? :)

I actually made this over the weekend while we were enjoying some much-needed cabin time at our friend’s place on Otter Tail Lake. With under ten minutes of prep, the slow cooker was ready to go, plugged in on low and I was out on the dock waiting to picked up by the boat.

At 6pm, when we all had enough sun to last us an entire summer, we headed in, showered and sat down to a ready-to-go meal that had very little clean up. A plus when you are cooking in a small cabin kitchen!
