Summer Chicken Salad -- Made With Greek Yogurt

This is a super easy recipe I got to all the time — especially for weekly meal prep. Now when I meal prep it, I typically don’t enjoy it with a croissant or buttery bread but that’s actually my favorite way to enjoy it. And using a rotisserie chicken means I can throw it together so quickly!

Chicken Salad

2 ½ lbs grilled or shredded chicken or rotisserie chicken, pulled and cooled

1 cup grapes, chopped

½ medium red onion, diced

2 celery stalks, diced

½ cup slivered almonds, toasted

3 scallions, minced

1 cup Greek yogurt

Juice from one lemon

1 tbsp garlic powder

1 tsp apple cider vinegar

1 tsp honey

Salt & pepper, to taste


In large bowl, mix dressing ingredients together. After chicken has cooled, add chicken, grapes, onions, celery, almonds and scallions to dressing mixture. Refrigerate for one to two hours before serving.
