Caramelized Onion Greek Yogurt Dip
1/2 medium red onion, thinly sliced
1/2 medium sweet onion, thinly sliced
5 cloves garlic, peeled
1 cup Greek Yogurt
1 tsp garlic powder
1 tsp garlic salt
1 tsp horseradish
Salt & pepper to taste
Melt cooking oil in medium skillet or cast iron pan over medium heat.
Add onions, garlic and sprinkle of sea salt.
Cook for 5 minutes until they start to soften, stirring occasionally to avoid browning.
Reduce heat to medium low, cover and continue to cook.
Stir onions every 10-15 minutes for a total cook time of about 35 to 40 minutes.
When onions are finished cooking, remove from pan and allow to cool in a bowl or on a cutting board.
Tip: Never add anything warm to Greek yogurt, it will turn into a slurpy mess!
Once they have cooled, chop up the entire mix (garlic cloves included) and add to Greek yogurt mix.
Greek Yogurt Dip
Mix Greek yogurt, garlic powder & salt and horseradish into serving dish. Once onions have cooled and have been chopped, add them to serving dish and mix thoroughly.
Let cool in fridge for an hour or two before serving.
