Toasted Almond and Honey Green Beans

I tried growing green beans in my garden this year. It was a rather unsuccessful endeavor, one that I’m hoping will be better next time around. Green beans from the garden remind me of my childhood. Steamed, a little butter, a little salt. So much better than the mushy canned ones we were served in school.
These beans are roasted, tossed in a little ghee, some salt and pepper before going into the oven. Super simple. I love the sizzle they make while they are roasting. The sound made me check the oven a few times, just to make sure everything was OK.
While they were in the oven, I toasted up some sliced almonds on the stove. If you’ve never done this before, it is super easy. A small frying pan over low to medium heat, just toss them around enough to make sure they don’t burn on the bottom.
A friend of ours gave us some fresh honey at our house warming and I’ve been rationing it because it is that good. A drizzle over the top did the trick — a little sweetness, a little salt, a little fat.

Ingredients
1 to 2 pounds of fresh green beans, cleaned and trimmed
1/4 cup sliced almonds
1 tbsp ghee or olive oil
Honey, drizzled
Salt and Pepper
Directions
Preheat the oven to 375°.
Cover baking sheet with wax paper.
Spread out beans on baking sheet and drizzle with ghee/olive oil.
Sprinkle salt and pepper generously over beans.
Bake for 15-20 minutes.
While green beans are roasting, toast sliced almonds in pan over low to medium heat.
When green beans are finished, mix beans and almonds in serving dish.
Drizzle with honey.
